Geometric Precision: The Unwavering Legacy of JUSTIN Vineyards & Winery

In the golden hills of Paso Robles, where the dramatic day-night temperature swings forge the character of California’s most ambitious reds, JUSTIN Vineyards & Winery stands as a titan of "Old World" methodology met with "New World" daring. Founded in 1981 by Justin Baldwin with a singular mission to craft world-class Bordeaux-style blends, the estate has spent over four decades proving that the Central Coast’s fossilized limestone soils are a mirror to the legendary terroirs of France.

At the heart of the JUSTIN narrative is ISOSCELES, a flagship blend that arguably put Paso Robles luxury winemaking on the global map. As we enter the spring of 2026, ISOSCELES remains a benchmark of geometric precision—a Cabernet Sauvignon-heavy masterpiece balanced with the thoughtful complexity of Merlot and Cabernet Franc. Named for the triangular harmony of its three components, the wine is a testament to the "Château" philosophy: a total vertical integration where the estate controls every variable from the limestone-rich ground to the final glass.

The winemaking team, led by Scott Shirley, continues to refine this legacy through a "spice rack" approach to blending. By harvesting and fermenting dozens of small, distinct vineyard blocks separately, the Maison ensures that each vintage of ISOSCELES or the Right-Bank-inspired JUSTIFICATION captures the graphic strength of the season. This commitment to precision extends beyond the cellar and into the soil, where JUSTIN has pioneered sustainable viticulture through innovative practices like recycled wastewater systems and regenerative sheep grazing.

For the Elevated traveler, JUSTIN is more than a winery; it is a full-sensory destination. The estate now boasts a One-MICHELIN-Starred restaurant, led by Executive Chef Rachel Haggstrom, which serves as a seasonal showcase for the property's 26-acre edible garden. Guests can immerse themselves in the "Maverick" lifestyle by staying at the JUST INN, a collection of luxury suites nestled among the vines, or the stunning 12,000-square-foot JUSTIN Chateau.

Whether you are blind-tasting in the library, touring the vast wine caves, or simply watching the sunset over the Adelaida Road vineyards, the experience at JUSTIN is an education in mastery. It is a place where the history of banking-turned-winemaking meets the future of sustainable excellence—a true reference point for the modern connoisseur.
