Chef Derek comes from the local heritage, bringing an infusion of Bajan influence and flavor to your favorite requests from cous cous to light flaky local fish. Some of his requested signatures are the Cucumber wrap shrimp salad with avocado and tomato dressing, Mahi Mahi with grilled veggies, garlic mash and ginger cream reduction, and the grilled Barracuda with basmati rice, asparagus and cherry tomato sauce. Meanwhile, sweet cassava pie, derived from the Arawak people's introduction of cassava to Barbados, combines grated cassava, coconut, and spices into a dense, flavorful dessert cherished for generations.
