With summer grilling season transitioning into fall tailgating and beyond, the team behind beloved Napa Valley winery, Post & Beam, put together three recipes that complement their Cabernet Sauvignon, Chardonnay, and Pinot Noir bottlings and are sure to become new BBQ classics. Here’s an overview of offerings from Post & Beam Director of Winemaking Michael Accurso and Assistant Winemaker Matt Ybarra with suggested pairings.



- Santa Maria BBQ Cookout with Tri Tip, Pinquito Beans & Salsa - A California grilling staple, this generously seasoned, juicy tri tip is marinated overnight (or for an hour if in a pinch) and accented with sides of rich pinquito beans (an easy Instant Pot or pressure cooker dish) and a simple, bright salsa. This meal is best enjoyed with Post & Beam’s Napa Valley Cabernet Sauvignon ($55), as its polished tannins cut through the meat’s fattiness and jammy blackberry, mocha, and subtly spicy palate complement the meat’s char and savory seasoning. 




- Grilled Oyster Mushrooms with Sumac, Salsa Verde, and Toum - A fresh, culinary-driven take on the typical portobello mushroom BBQ offering, this dish pairs oyster mushrooms marinated in lemon juice and sumac with a zingy salsa verde and bold toum, or Lebanese garlic sauce. This dish pairs beautifully with white and red. The acidity of the Post & Beam Sonoma Coast Pinot Noir ($40) cuts through the rich toum and its subtle baking spice nose that emphasize the salsa verde’s herbs whereas the subtle oak of the Post & Beam Carneros Chardonnay ($40) complements the mushrooms’ savory, caramelized flavors and vibrant acidity cleanses the palate with every bite.  




- BBQ Chicken Pizza on the Grill - A rich pizza that will delight the whole family, this dish features a barbecue sauce base topped with grilled chicken breast, bacon, cheese, red onion, and cilantro. This pizza best pairs with the Sonoma Coast Pinot Noir ($40), as the wine’s deep fruit flavors accentuate the barbecue sauce’s sweetness and its silky structure does not overpower the chicken.
