Malka Arrives in Beverly Hills Bringing Eyal Shani's Ingredient-Driven Cuisine to Los Angeles

The celebrated Israeli chef expands his Los Angeles presence with a vibrant new expression of modern kosher dining, shaped by California’s produce, Mediterranean flavors, and a deeply instinctive approach to hospitality.


Chef Eyal Shani has brought his acclaimed restaurant Malka to Los Angeles, opening at Jason Pomeranc’ SIXTY Beverly Hills, in partnership with LA-based Pagani Projects. The Beverly Hills debut at SIXTY Hotels marks the latest chapter in Shani’s expanding West Coast presence and introduces Los Angeles to Malka’s distinctive combination of ingredient-driven cuisine, convivial hospitality, and modern kosher dining.



“Bringing MALKA to Los Angeles is incredibly meaningful for us,” says Giancarlo Pagani of Pagani Projects. “There’s a natural alignment between the way Eyal cooks and the culture of this city, both shaped by seasonality, energy, and a real respect for ingredients.”


Following successful openings in Tel Aviv, New York, and West Palm Beach, Malka arrives in Los Angeles with a culinary philosophy rooted less in convention than in instinct. For Shani, ingredients are treated as living entities, with seasonality, simplicity, and intensity of flavor guiding the kitchen.


That philosophy takes on a distinctly Californian expression at Malka Beverly Hills. While the restaurant adheres to kosher dietary laws, its identity extends well beyond them, offering an expansive dining experience built around Mediterranean flavors, exceptional produce, wine, cocktails, and the communal energy that has become central to Shani’s restaurants.


“Los Angeles is a city of freedom and becoming,” said chef Eyal Shani. “MALKA arrives here not as something defined, but as something that will take shape through the people, the produce, and the longing for connection. It is a meeting between those who create and those who crave - and in that meeting, the food becomes alive.”


A California Expression of Shani’s Cuisine

The Los Angeles menu combines Malka signatures with dishes created specifically for the city. California’s extraordinary agricultural abundance serves as a natural counterpart to Shani’s ingredient-first cooking, with seasonal produce appearing throughout the menu.



Among the Los Angeles-exclusive offerings are Melanzana, Niçoise Salad, and Wild King Ora Salmon Bruschetta. Additional seasonal dishes showcase local figs, pluots, peaches, and other produce at its peak, allowing the menu to evolve with the rhythm of California’s growing seasons. Malka favorites include the Queen Malka Schnitzel, a chicken schnitzel stuffed with mashed potato marrow; Branzino Hraime, a celebratory preparation rooted in Mediterranean tradition; Onglet served over roasted white peaches; and Shani’s signature Israeli hummus. The result is cuisine that feels both elemental and expressive dishes that highlight the character of an ingredient while layering in the bold flavors and theatrical sensibility that define Shani’s cooking.



Wine, Cocktails and the Spirit of the Table

The beverage program complements the food with a curated selection of distinguished kosher wines alongside cocktails that reinterpret familiar classics through Malka’s lens.


Created exclusively for Los Angeles, the Iris combines Woodacre Vodka with white peach-mint purée and fresh lemon, while the Pomelo Paloma pairs Mexxo mezcal with fresh pomelo and lime. The program reflects the restaurant’s larger philosophy: tradition provides a foundation, but interpretation is encouraged. In the same way that Shani works instinctively with ingredients, the beverage experience is designed to complement the energy and generosity of the table.


A Restaurant Designed Around Connection

Malka’s Beverly Hills setting was designed by Turjeman Yaakov of Jacob Turgeman Design, whose portfolio includes SHMONÉ and SHMONÉ Wine in New York, Miznon locations around the world, Malka in New York and Tel Aviv, HaSalon in New York and Las Vegas, Naked Tomato in Miami, and more. For the Los Angeles location, the designer translates Malka’s signature raw materiality and warmth into a setting attuned to Beverly Hills. A sculptural white oak bar serves as the room’s visual and social anchor. Warm brass, textured surfaces, aged wood, reflective details, and vintage-inspired furnishings create a layered environment, while statement chandeliers bathe the space in a soft golden glow.



Natural produce displays and ingredient-led styling reinforce Shani’s belief that food can be both subject and spectacle. Deep greens, earthy neutrals, and aged wood give the dining room a grounded character, while communal tables, intimate seating, and a lively bar encourage an atmosphere of movement and conversation. The design ultimately serves the same purpose as the food: bringing people together.


The Good People Group’s West Coast Chapter

Malka’s arrival follows the continued expansion of Shani’s restaurant portfolio throughout Los Angeles. Miznon opened at Grand Central Market in 2025, followed by a Beverly Grove location in early 2026. The broader Good People Group portfolio spans concepts including Miznon, HaSalon, Port Sa’id, SHMONÉ, Bella, and Naked Tomato, with restaurants across international markets including London, Paris, Singapore, Panama City, and beyond.
