Silo Ridge Brings Its Signature Craftsmanship to Downtown Amenia with Silo Bakery

Discovery Land Company’s incredible Hudson Valley property, Silo Ridge Field Club, offers a one-of-a-kind living experience nestled in the historic and picturesque landscape of the Hudson Valley. Now, that same spirit extends to the heart of downtown Amenia with the opening of Silo Bakery, a beautiful new addition to the community.


Silo Bakery serves as a cornerstone of activity for Downtown Amenia, providing beautiful and amazingly delicious pastries, breads, and coffees in a casual streetside setting. The bakery is committed to fostering community and connection through shared taste experiences that surprise and delight. Since opening to the public in July 2025, it’s already become a local favorite with one resident saying there are “lines around the corner most mornings.”



At the helm is Pastry Chef Thomas Croizé, born and raised just north of Paris, where his passion for food was first sparked in his mother’s kitchen and nurtured during family visits to Normandy. His career includes time at the three-Michelin-star Le Louis XV by Alain Ducasse in Monaco, Restaurant Daniel in New York, and the Plaza Athénée in Paris. Today, he proudly leads Silo Bakery, blending refined technique with a deep love for local produce and community.



The menu rotates with the seasons, featuring espresso, cappuccino, lattes, and Illy Café coffee, along with croissants, tarts, cakes, and house-made artisanal breads. Breakfast favorites include ready-made sandwiches, yogurts, parfaits, and granolas, while lunch offers grab-and-go sandwiches and seasonal soups. Retail shelves are stocked with jams, fruit spreads, honey, and bottled beverages. Gluten-free and vegan pastries are always available.



Among fan favorites are the chocolate croissant, made with 44 percent cacao from Cacao Barry and French butter from Isigny Sainte-Mère, and the banana bread, described as “divine and decadent.” Seasonal pies like cinnamon and cherry crumble and blueberry crispy-top have already become a local obsession.


With its French-inspired flavors, warm atmosphere, and focus on craftsmanship, Silo Bakery has quickly become a delicious and inviting stop, bringing the heart of Silo Ridge to downtown Amenia.
