Winter is… a lot. But you know what makes January instantly more cozy and charming? National Irish Coffee Day, Saturday, January 25th—the perfect excuse to wrap your hands around something warm and delicious.
This year, we’re celebrating the classic cozy cocktail with a serious upgrade thanks to the Dead Rabbit and Boann Distillery’s The Whistler Irish Whiskey—a bold, modern Irish whiskey that reinvents a simple Irish coffee.
Below are a few of our favorite recipes to transport us to a cozy, fireside Irish pub. The Dead Rabbit’s Irish Coffee created by Aidan Bowie, Beverage Director.

1 oz. Boann Pedro Ximenez Finish
.625 oz. Rich Demerara Syrup
3.5 oz. Hot Coffee
Instructions:
Pour all ingredients into a heatproof glass, leaving an inch of room at the top of the glass. Layer some freshly whipped cream on top and grate some nutmeg over the top to garnish.
The Whistler Classic Irish Coffee is a traditional Irish coffee—but smoother, warmer, and absolutely irresistible.

Ingredients:
1.5 oz The Whistler Double Oaked
Hot coffee
Semi-whipped cream
Optional: cocoa powder, nutmeg, or a single dramatic coffee bean
Instructions:
Warm your glass, brew your coffee, and lightly whip heavy or double cream with a spoonful of sugar until it pours slowly. This can be achieved in cocktail shaker with cocktail straining spring. Add sugar + whiskey + coffee to your warm glass and stir vigorously to dissolve the sugar. Gently float the cream on top by pouring over the back of a spoon. Sip hot coffee through the cold cream float.
